Stovetop Macaroni and Cheese

INGREDIENTS

  • 8oz uncooked macaroni

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

  • 1 cup whole milk

  • 1/4 cup plain Greek yogurt

  • 2 cups grated cheese

 

METHOD

Cook macaroni according to package directions. Drain and set aside.

For the cheese sauce, mix the flour, salt, and garlic powder in a small bowl. Melt the butter in a medium saucepan over medium heat. Add the flour mixture and whisk, cooking for 1 minute until slightly brown.

Add the milk and whisk until smooth. Add Greek yogurt and whisk until smooth. Cook on medium-high until thickened (3-5 min), do not boil. Reduce heat to low and add grated cheese, whisk until smooth.

Stir in the macaroni to coat. Serve and enjoy!
