It’s a busy time of year. Who needs a mac & cheese recipe that is super simple, high in protein and fibre plus your kids will love?This recipe comes together in about 20 minutes and it’s a must!
INGREDIENTS:
1 box of elbow macaroni (either Smart or bean based)
¼ cup butter¼ cup all-purpose flour
½ teaspoon salt1.5 cups milk
½ cup plain Greek yogurt
2 cups marble or cheddar cheese
INSTRUCTIONS:
Cook your box of higher fibre pasta according to the package instructions (don’t forget to salt the water!) we used @catellipasta Smart
Meanwhile, melt butter over medium heat. Add flour and salt to make a roux.
Slowly pour in milk and Greek yogurt, mix under smooth and bubbly (make sure not to burn the milk!)
Add in cheese and stir until creamy (don’t use pre-grated cheese here or it will be lumpy)
Add the cheese sauce to the precooked macaroni, add a sprinkle more of cheese (if desired) and fight your kids for it.
